Langues De Chat/Cats Tongue Biscuits
Langues de chat or cats tongue biscuits are shaped like a cats tongue-long and thin. These biscuits have European origins, which country is still debated and unknown. They are a delicacy and go well with your evening tea or coffee. I made two batches, piped on parchment paper and one on silpat. The silpat one came out well. I used the recipe of Chef Iginio Massari. Do give this biscuit a try! Its amazingly easy and delicious!

Langues De Chat / Cat’s Tongue Biscuits
Thin and delicious biscuits, shaped like the tongue of a cat.
Ingredients
- 50 grams Softened butter
- 60 grams Powdered sugar
- 50 grams Egg white
- 50 grams All-purpose flour
Instructions
- Pre-heat oven to 190°C.
- Take softened butter in a bowl, add egg white to it and mix gently with a spatula.
- Add the powdered sugar to this and mix. Add the sifted flour to the mixture and mix well till it's smooth.
- Take a piping bag fit with a nozzle. The nozzle must be a size 8 or 9.
- Place a silpat on a baking tray. Pipe thin straight lines of about 10 centimetres. Leave 2 inches gap between them.
- Bake for 8 minutes. Take it out of the oven and if you want to shape them, shape them while hot. Place on a rolling pin or twist gently to make shapes.
- Cool them and relish!
