Neer Dosa

Neer dosa or the literal translation of water dosa is a super thin, lacy and delicate rice crepe. This Mangalorean delicacy has been whole heartedly accepted all over and now is staple in many households and restaurants. It involves minimal ingredients and effort to make them, but a little bit of skill is imminent. Skill in swirling the hot pan fast, skill in understanding the exact consistency of the batter. If you nail them, then getting these thin dosas that resemble a lady’s handkerchief isn’t difficult.

These soft dosa pairs well with coconut based non-veg and veg curries, chutneys or you can have them with jaggery or even coconut milk.

Ingredients
  

  • 1 cup Raw rice
  • ¼ cup Grated coconut optional
  • Salt as per taste
  • Water

Instructions
 

  • Soak the rice overnight or for 2-4 hours.
  • Grind the rice to a smooth paste, you can add the coconut if you wish to. It will impart a lovely flavour.
  • Grind the rice using little water. If you use too much water to grind the rice, it will not turn smooth.
  • Once the rice is ground to a smooth paste, add water and salt. Add water till you get a free flowing batter. It shouldn't be thick at all, it must be the consistency of milk.
  • Heat a tawa. The tawa must be one which has edges.
  • Take one ladle of dosa batter and pour in the middle. Swirl the tawa so that the batter reaches all sides. You can pour a little batter in places that the batter hasn't covered.
  • Cover and cook for a minute or two. With a spatula fold the dosa first into half then into quarter. Gently remove from the tava. Repeat till all the batter is used.
  • Pair neer dosa with chutney, non-veg curries, veg curries or even coconut milk.
