Udupi Idli / Rava Idli
Madras Cafe in Matunga, Mumbai is very famous for their South Indian breakfast. Their idlis are something you can scoop with your spoon, dunk into the delicious sambar and relish. I used to wonder how their idlis had that grainy texture. I used to always think of trying it but then would make idlis my way, grinding rice and lentil.
Then one day something clicked and I made the Udupi idli. It’s such a simple preparation and yielded those delicious grainy idlis. We paired it with coriander chutney and the Madras Tiffin Sambar, I will share the recipe of the same someday soon. This was complete bliss. The idlis had that super soft, crumbly and grainy texture of Udupi idlis.

Ingredients
- 2 cups Idli rava
- 1 cup Whole urad dal
- Water
- Salt
Instructions
- Wash and soak the urad dal for 3-4 hours. Wash and soak the idli rava for 30 minutes.
- Grind the urad dal with very little water till you get a fluffy, smooth and thick batter. Pour this batter into a deep vessel.
- Drain the soaked idli rava using a sieve or mesh with really small holes. Or you can also grab a fistful and squeeze out the water. Ensure most of the water is drained.
- Add the drained idli rava to the ground urad dal batter. Mix well with your hands, cover and keep aside overnight for fermenting.
- The next day you can see that the batter has risen. Add salt to the batter and mix well.
- Heat water in the idli pan. Grease the idli mould with little oil and pour the idli batter in each mould.
- Place the idli mould in the pan, close the pan and steam it for 10-15 minutes. You can check whether the idli is cooked by inserting a knife in the middle of the steamed idli. If it comes out clean the idli is cooked, if not then steam for another 5 minutes.
- Take the mould out of the pan and allow it to cool for atleast 5-10 minutes before you take the idli out of the mould with a spoon.
- Enjoy your warm idlis with sambar or chutney, or even both!
