Super Soft Super Easy Cornbread
I baked cornbread for the first time using Nigella’s recipe. Though it was very flavourful, the bread was a bit too sticky for my liking. One day I was craving for some cornbread and searched for a good recipe. I liked the recipe of Fifteen Spatulas, hence tried it. The bread was so so so soft and light and delicious! It’s a very easy bread to bake and can be had as it is, with some butter or with any roasts.

Super Soft Super Easy Cornbread
This light, soft and delicious cornbread can be made in a jiffy and will be loved by all!
Equipment
- Rectangular or Square pan – 8"
Ingredients
- ¾ cup All-purpose flour
- 1¼ cup Yellow cornmeal
- ½ tsp Baking soda
- ½ tsp Salt
- ½ cup Unsalted butter melted
- ½ cup Castor sugar
- 2 nos Eggs
- 1 cup Buttermilk
Instructions
- Pre-heat oven to 180°C. Grease your baking pan with butter.
- In a mixing bowl mix the butter and sugar till well combined and thick with a balloon whisk. Add the eggs to this and mix till its combined and is frothy. Now add the buttermilk and mix the same.
- Sift the dry ingredients – cornmeal, flour, baking soda and salt into a bowl.
- Add the dry ingredients to the wet ingredients and whisk till the flour disappears. Do not over whisk. Even if there are lumps, it's okay.
- Pour the batter into the greased pan and bake for 35-40 minutes till a tooth pick inserted comes out clean.
