English Crumpets

We were walking along Windrush at Bourton-on-the-Water when we spotted De la Haye’s. Since it was freezing cold we decided to have some afternoon tea there. While going through their menu is when the word caught my attention – Crumpets. It sounded different so we ordered it along-with other delicacies. They were just a “holey”pancake. With warm butter and jam they tasted good. It was when I made them at home that I realised that the homemade ones are very delicious and tastes so so much better than the cafe one.

What are crumpets? They are quintessential English griddle cakes with their characteristic holes. They are very different from the English muffins as they are fluffy, light and very flavourful because of the prominence of yeast. Crumpets are said to have originated in Wales. And the word Crumpet seems to have Celtic influences. It’s also said the name comes from the metal ring or the cramp used to make them.

This is a very easy recipe to make and the best part is you can just mix them up, keep them for fermenting while going about your other chores and get back and just cook them.

Equipment

  • 9 cm length x 3 cm depth cookie cutter or round tin

Ingredients
  

  • 150 gms All-purpose flour
  • 100 ml Water
  • 100 ml Milk
  • ½ tsp Salt
  • ½ tsp Sugar
  • 1 tsp Yeast
  • 1 tsp Baking powder

Instructions
 

  • Mix the sugar and yeast with 2 tbsp of the water for 2 mins.
  • Add flour, water, milk and salt in a large mixing bowl and mix with a balloon whisk till they are well combined.
  • Now add the yeast mixture along-with baking powder to the batter and mix vigorously. You can use a hand mixer, but I felt it would just aerate the batter too much.
  • Cover the mixing bowl and set aside for 30 minutes to 1 hour. The batter will double up in volume.
  • Heat a griddle or a flat pan on medium heat. Grease the cookie cutter with butter.
  • Place the cookie cutter on the griddle.
  • Stir the batter ever so lightly and using a ladle pour equal amounts of batter into the cookie rings upto ¾ of its height.
  • Let it cook for 3-4 minutes. Gently lift the cookie cutter. If the crumpet is sticking to the sides, use a bread knife and run it along the sides.
  • Flip and cook the crumpets for 1 minute, if you are having them right away.
  • If you are freezing them, then do not flip them. Just cool and freeze them in ziplock pouches.
  • Spread butter and jam on warm crumpets and relish them!
