Nura Pathiri
Light as a feather and really delicious , what is not to love about these beauties! People may argue that it’s cumbersome. But let me assure you it isn’t difficult as it looks. With a hand blender in one hand and a hot tava you take hardly 2 minutes for each of these beauties. Today we have a hand blender atleast. During olden times ladies used to use hand churners to foam this up. I have to thank Garam Masala for such a precise recipe.
As I had mentioned in my earlier Pathiri post, our Kerala pathiris can trace their ancestors to Arabia. We just embraced the Fateera of the Arabs and gave our twist to it. The result, a lot of different pathiris. I sometimes do wonder how did the cooks of Malabar come up with such varieties? Variety in taste, technique, ingredients and what not!
I paired the Nura Pathiri with my simple Chicken Curry. Do try this light, fluffy and tasty pathiri, and kindly let me know your review.

Nura Pathiri
Equipment
- Hand Blender
Ingredients
- 1 cup Basmati rice/Jeerakashala rice
- 2 nos Eggs
- 2 cups Coconut milk
- Salt as per taste
Instructions
- Wash and soak the rice for 3-4 hours.
- After soaking, drain the rice and transfer it to a grinder. Add the eggs and ¼ cup coconut milk to the rice.
- Grind it into a smooth paste. Don't add too much coconut milk as you will not get a smooth paste if there is too much liquid in the batter.
- After grinding it into a smooth paste, transfer it to a large mixing bowl.
- Add the rest of the coconut milk and salt and mix well. The batter must be free flowing, with a watery consistency. If you feel it's thick, you can add a little water.
- Heat a flat tava. Take a hand blender and start beating the batter in high speed. Foam will start forming around the bowl. Gently scoop this foam and pour it on the hot tava.
- Don't spread the foam with the laddle as that would lead to the bubbles breaking and you won't get the holes for the pathiri nor will it be fluffy.
- Keep pouring the foam on the tava to form a round shape. Close and cook for 1 minute. You don't have to flip the pathiri. Remove the pathiri from the tava. repeat this process until the batter is over.
- Enjoy the pathiri with any spicy curry!
