Brussel Sprout Salad
Brussel sprout is a vegetable I was always fascinated with. They looked so cute and pretty. Since getting them in India is quite difficult, making them was always on the back burner. I used to sigh looking at them on my Instagram feed or cookbooks. Then one day I found them while buying vegetables at our local market – Pali Nakka. I made them using a recipe inspired by Jamie Oliver. I have to admit, it wasn’t a very different tasting vegetable. But I loved this salad, the flavours complimented each other. We paired Korean Style Ribs with this salad.

Brussel Sprout Salad
Crunchy, nutty and delicious salad.
Ingredients
- 500 gms Brussel sprouts halved
- 2 tbsp Olive oil
- 1 no Lemon
- 1 tsp Chilli flakes
- 3 tbsp Almond slivers
- 4 tbsp Parmesan grated
- Salt as per taste
Instructions
- Preheat the oven to 220ºC.
- Place the halved brussel sprouts on a large baking tray. Add the oil, grate over the lemon zest, then sprinkle with the chilli flakes, almond slivers and salt. Mix with your hands to coat.
- Roast in the oven for 10 minutes – the sprouts should start to caramelise in places; when that happens, scatter over the Parmesan and roast for a further 15 minutes, until the cheese is crisp and golden brown, and the sprouts tender.
