Paneer Paratha

Let me start by saying I love paneer. You present paneer in any-form to me and I’ll have it. But then I have someone at home who dislikes paneer. Post marriage when my husband expressed his dislike for paneer I was aghast! But then slowly and secretively I started sneaking in paneer in our dishes. Poor guy was unaware. Now 12 years post marriage I have become a bit more daring.

This paratha is one such dish that I brazenly make. And though there are no masalas to camouflage the paneer my husband loves it.And this paratha gets made super fast. No sauteing, no tadka, no slogging basically. Grate mix and roll and you have delicious paneer paratha.

You can add onions, ginger-garlic, coriander leaves, cumin etc, though the paratha tastes awesome without them too. This recipe can be a quick fix breakfast when you are pressed for time.

Ingredients
  

Paratha Dough

  • cups Wheat flour
  • Water
  • Salt

Paneer Filling

  • 200 gms Paneer grated
  • ½ tsp Garam masala
  • ½ tsp Aamchur powder
  • ½ tsp Red chilli powder
  • 2 nos Green chilli
  • Salt
  • 6 tbsp Butter room temperature

Instructions
 

Paratha Dough

  • Take the flour in a mixing bowl along with salt, pour water little by little and knead to a soft but firm dough. Cover it with a wet tea towel and keep aside.

Paneer Filling

  • Add the green chilli, masala powders and little salt to the grated paneer. Mix well.

Rolling and Cooking

  • Divide the dough into 8 equal parts.
  • Take one of the dough balls and using your rolling pin roll it into a circle. Place 2-3 tablespoons of stuffing in the center. Don't overfill else it will be difficult to roll.
  • Bring all the edges together and pinch to seal the edges. Flatten the dough ball using your hands.
  • Dust some flour on your work surface, now using your rolling pin, roll the dough to a circle of 7-8 inch diameter. Put equal pressure on both sides of the roller, this will enable you to get a circle easily.
  • Transfer the rolled paratha onto the hot tawa. Cook the side for a minute or two and then flip over. Apply a little butter on the half-cooked side and flip again.
  • Now apply butter on the other side as well. Press with a spatula and cook the paratha till both sides have golden brown spots on them.
  • Repeat with the remaining dough balls.
  • Serve the paneer paratha with some curd and pickle.
