Mutta Surkka
Mutta Surkka or Mutta Sirkka is a fried rice and egg snack. It’s a Malabar delicacy and part of the Moplah Cuisine. Initially seeing the pictures of this snack, alongwith the name made me think they stuff a whole boiled egg inside. But then when I read the recipe I understood that the addition of egg in the batter makes it rise. It’s a very delicious snack that can be had as it is, or can be paired with spicy curries.
We mustn’t add too much water while grinding, since the batter has to be poured into hot oil. A watery batter will mean the snack won’t hold shape and it won’t rise. I made this snack thrice and I’m detailing the recipe from Nas Kitchen which helped me get really delicious and pretty looking Mutta Surkkas.

Mutta Surkka
A fried rice and egg snack. This Malabar delicacy can be had as it is or paired with spice curries.
Ingredients
- 325 gms Basmati rice
- 2 nos Eggs
- 2 heaped handful Cooked rice
- Salt as per taste
- Oil for frying
Instructions
- Wash and soak the basmati rice for 4 hours.
- Mix the soaked rice with the cooked rice, eggs and salt. Grind it to a smooth batter. The batter must be in the consistency of an idli batter.
- Heat oil in a kadai. Pour one laddle of the batter into the hot oil.
- Wait till you find bubbles forming on the surface, flip it gently. Cook for about 5 more minutes on medium flame.
- Remove it with a slotted spoon and repeat the process for the rest of the batter.
