Chicken Traybake
We all have those days when we don’t feel like slogging in-front of the stove, sauteing and cooking. This is the perfect recipe for such days. When you look at a traybake it may seem like a lot of things are going on in there. But let me assure you it’s simple and easy.
I usually don’t measure the ingredients while baking like this, but have tried to remember what I have put in this time so that I can record it here. I made a Ciabatta bread to go along-with it. The recipe for the same will be published soon.

Chicken Traybake
An easy traybake recipe to get going during those busy days!
Equipment
- Baking tray
Ingredients
- 2 nos Chicken thighs
- 6 nos Broccoli florets
- 10 nos Cherry tomatoes
- 2 nos Onions sliced
- 1 no Bell pepper
- 2 nos Garlic pod
- 1 tsp Pepper powder
- 1 tsp Cumin powder
- 2 tsp Chilli powder
- 1 tsp Dried oregano
- 150 ml Red wine
- 100 ml Chicken stock optional
- 1 tbsp HP sauce
- 1 sprig Fresh thyme
- 2 sprigs Fresh rosemary
- 2 tbsp Olive Oil
- Salt as per taste
Instructions
- Heat oven to 200°C.
- Season the chicken with pepper powder and salt. Place the chicken in the tray, pour some olive oil and roast for 15 minutes.
- While the chicken is roasting, cut the vegetables into desired sizes.
- Take a bowl and mix the red wine, chicken stock, HP sauce, chilli powder, cumin powder and oregano.
- Take the chicken out of the oven after 15 minutes. Stir in the vegetables and wine mixture into the tray and bake for another 15-20 minutes.
- Baste the chicken with the liquid in between.
- Take the tray out after 20 minutes and check whether the gravy in the tray is more. If it is more then slowly pour the gravy into a saucepan and reduce to a thick consistency and use.
- Garnish the chicken and vegetables with rosemary and thyme and have along-with some crusty bread,
