Chicken Roasted with Grapes and Leeks
People who know me well, know my obsession for groceries. I absolutely dislike shopping for clothes, but put me in a good grocery store ,I’ll spend my entire day there. Reading the labels, Googling recipes standing with the product in hand, that’s my thing. So when we travel , I ensure to bring back products that aren’t available in India. And when in London the two main places I go to are Sainsbury’s and Waitrose.
One among the many things I love about Waitrose is their recipe cards. They have different recipe cards for the month and you can take them for free! The recipes are available on their website too. So I tried this recipe from one of their cards and it turned out real good! This is the first time i was cooking chicken with grapes,wasn’t too sure of that combination,but it turned to be surprisingly good!

Chicken Roasted with Grapes and Leeks
Equipment
- Roasting pan or casserole
Ingredients
- 4 nos Chicken legs
- Pepper and salt to season
- 2 nos Leeks trimmed and sliced
- 150 gms Green grapes halved
- 4 sprigs Rosemary
- 100 ml Chicken stock
- 1 tsp Lemon juice
- 700 gms Mashed potato
- Rocket leaves
Instructions
- Pre-heat the oven to 200 degree Celsius or gas mark 6.
- Season the chicken with salt and pepper. Place them on the roasting pan and roast for 10 minutes, until they turn golden. Turn and cook them for 5 more minutes.
- Set the chicken aside on a plate. Add the leeks to the roasting pan with a pinch of salt. Fry for 5 minutes,or until softened.
- Stir in the grapes, rosemary, stock and a squeeze of lemon juice. Arrange the chicken legs on top and roast it together for 25 minutes until the chicken is completely cooked through.
- Serve the chicken legs with mashed potatoes, with leeks and grapes, the cooking juices and a handful of rocket leaves.
