Appam and Kerala Vegetable Stew
Hi everyone! This is my first post, and its an absolute satisfaction that I have. I have been wanting to share my recipes with you for a long while now. I have been sharing pictures of what I make, on my Instagram handle,and whenever someone asks me for a recipe I used to feel guilty. Now that guilt is gone and I will be sharing every recipe that I have tried on this platform. Stay tuned friends!
Being the first post I was in a dilemma which recipe to share. Then I thought which better recipe than our very own Appam and stew. Every household have their take on this classic breakfast combination. Im sharing my recipe, the way we make it at our place. I do hope that you will like it!

Appam and Kerala Vegetable Stew
A classic Kerala breakfast combination. The lacy soft appams and the creamy stew is the perfect way to start your day. As they say, have your breakfast like a king! This dish is definitely in line with that saying!
Equipment
- Pressure Cooker
- Appam Pan Or Tawa
Ingredients
Appam
- 2 cups Raw Rice Soaked for 5-6 hours
- ½ cup Cooked Rice
- ½ cup Grated Coconut
- ½ tsp Instant Yeast
- 2 tsp Sugar
- 1 tsp Salt
Kerala Vegetable Stew
- 3 nos Potatoes (cubed)
- 1 no Carrot (cubed)
- ¼ cup Fresh peas
- 1 no Onion (sliced)
- 1 no Green Chilli (slit)
- 1 inch Ginger (chopped and crushed)
- 1 tsp Whole peppercorns (crushed)
- 1 inch Cinnamon
- 3 nos Cloves
- 1½ cup Grated coconut
- 1 sprig Curry leaves
- 2 tsp Oil
- 1 tsp Salt
Instructions
Appam
- Soak the raw rice for 5-6 hours. Wash thoroughly and grind along-with the cooked rice, grated coconut and yeast into a free flowing consistency. Add sugar ,mix well and keep the batter aside to ferment for 8 hours or overnight. Once the batter has fermented well,add in the salt and keep it aside for half an hour for the batter to start frothing. Heat a tawa or appam pan ,take one ladle of batter ,pour it into the hot pan and swirl it. You can see the lace being formed because of the well fermented batter. Close the pan ,and cook the appam for 5 minutes or until the middle portion is cooked.
Kerala Vegetable Stew
- Put the vegetables along-with ginger,pepper,cloves and cinnamon in a pressure cooker,pour in 1 cup of water and cook for 15 minutes or 4 whistles. For extracting the coconut milk ,transfer the grated coconut to a mixer jar or grinder, pour in ½ cup of water and grind it. Sieve the coconut paste and extract the first coconut milk which will be thick.Pour ½ more cup of water and grind the coconut paste further ,sieve the paste and extract the second coconut milk. Once the cooker releases its steam,open the lid and pour the second milk to the cooked vegetable mix, cook it till it thickens a bit. When the mix is thickened pour the first coconut milk extract and off the stove.Pour in the oil and garnish with curry leaves.
